Custard with Blueberries, by Cheryl


Let me start off by saying that I love custard. I will eat it anytime, anywhere, and will eat way too much of it at once! So when I accidentally substituted corn meal for cornstarch I still ate the end result because I love it so much! This recipe from that I found at foodgawker.com drew my attention because it seemed pretty easy and fruit was involved. So here was my major mistake when making this: the recipe calls for cornstarch... being a novice cook I thought that I could substitute the corn meal I already had for the cornstarch. Don't do this! While the custard was still good (and Jon had no complaints either) it was very very grainy. If you don't have corn starch on hand then it is recommended that you use double the amount of flour.

Ingredients:

4 large eggs
1/4 cup + 2 tablespoons cornstarch
4 cups half-and-half
1 cup sugar
1/2 tsp of salt
2 teaspoons vanilla extract
2 tablespoons butter

Directions:

1) In a small bowl, whisk together the eggs and cornstarch, whisking until the cornstarch is completely absorbed. Whisk in 1/4 cup of the half-and-half.

2) In a medium saucepan, combine the remaining half-and-half, sugar and salt and bring to a boil. Whisk 1/4 cup of the hot half-and-half mixture into the eggs, then slowly pour all of the egg mixture back into the boiling half-and-half, whisking constantly. The mixture will become very thick. Remove from heat and whisk in the vanilla and butter.

3) Transfer to a bowl and immediately press a piece of greased plastic wrap over the top of the cream to prevent a “skin” from forming.

4) Top with fruit of your choice.

I remember my mom making this dish a lot when I was growing up. While it was cooking I used to taste the sauce about every 5 minutes! I combined my mom's recipe with Giada's recipe. It doesn't take too long to cook and not long at all to prepare. The only difference I made in the recipe is that I used skinless, boneless chicken breasts when it calls for actual chicken breasts/thighs/legs/etc. Either way you won't be disappointed. YUM!

Ingredients:

- 4 chicken thighs, 2 chicken breasts (again, I used the boneless/skinless)
- salt & pepper
- 1/4 cup of flour
- olive oil
- 1 large bell pepper
- 1 onion
- 4 garlic cloves, chopped
- 3/4 cup white wine
- One 28 can of diced tomatoes with juice
- 3/4 cup reduce sodium chicken broth
- 1 1/2 teaspoon dried oregano leaves
- 1/4 cup chopped basil leaves
- pasta or rice to serve it with

Directions:

1) Season the chicken with salt and pepper. Dredge the chicken pieces in flour to coat lightly.

2) Saute the chicken over medium high heat until golden brown (about 3-4 minutes). Transfer the chicken to a plate and set aside.

3) Add a little olive oil, the bell pepper, onion, and garlic to the same pan and saute until tender, about 5 minutes. Season with salt and pepper.

4) Add the wine and simmer for about 3 minutes.

5) Add the broth, the tomatoes with their juice, and oregano.

6) Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering for about 30 minutes.

7) Serve the chicken and sauce over pasta or rice.
